Hallo my beautiful people! Today, I want to share with you some delicious recipes that feature one of my favorite ingredients: Mandeln! Mandeln, or almonds, are not only delicious, but they’re also good for you. They’re rich in healthy fats, fiber, protein, magnesium, and vitamin E. So, let’s get started!

Gebrannte Mandel Torte

This torte is perfect for a special occasion or holiday gathering. The caramelized almonds add a crunchy texture to the soft cake layers. Here’s what you’ll need :

  • 200g Mandeln
  • 100g Zucker
  • 100g Butter
  • 4 Eier
  • 1 Pck. Vanillezucker
  • 160g Mehl
  • 1 Tl. Backpulver
  • 1 Tl. Zimt
  • 1 Prise Salz
  • 200ml Milch

Instructions:

  1. In a pan, caramelize the sugar with the almonds until golden brown. Let it cool down before processing in a food processor until finely grounded.
  2. Preheat the oven to 180°C. Grease a 24 cm springform pan and line with parchment paper.
  3. Cream the butter with the sugar and vanilla sugar. Add eggs one by one and mix well.
  4. Sift flour, baking powder, cinnamon and salt over the mixture; fold in together with the grounded almond mixture and milk.
  5. Pour the batter into the prepared pan and bake for 50 min. or until a toothpick inserted comes out clean.

Brownie-Torte mit Schokoladen-Ganache

If you’re a chocolate lover, this rich and decadent dessert is perfect for you! The ganache glaze and chopped almonds topping make it even more indulgent. Here’s what you’ll need:

  • 400g Zartbitterschokolade
  • 300g Butter
  • 6 Eier
  • 280g Zucker
  • 300g Mehl
  • 1 Tl. Backpulver
  • 100g gehackte Mandeln
  • 200g Sahne

Instructions:

  1. Preheat the oven to 180°C. Grease a 26 cm springform pan and line with parchment paper.
  2. Melt the chocolate and butter in a double boiler.
  3. In a different bowl mix eggs and sugar, then add the melted chocolate mixture to the egg mixture and fold in flour and baking powder.
  4. Stir in the chopped almonds and pour the batter into the prepared pan. Bake the cake for 50 min or until a toothpick inserted comes out clean.
  5. For the ganache, heat up the cream in a pot and add the chocolate until melted. Let it cool down a bit to thicken. When the cake is cooled down, pour the ganache over it and sprinkle with chopped almonds.

Rehrücken mit gehackten Mandeln

This tasty dish is a great alternative to a traditional roast. The combination of tender venison and crunchy almonds is irresistible. Here’s what you’ll need:

  • 1 kg Rehrücken
  • 50g Butter
  • 50g Mehl
  • 1l Gemüsebrühe
  • 300g gehackte Mandeln
  • Salz und Pfeffer

Instructions:

  1. Preheat the oven to 180°C. Season the venison with salt and pepper.
  2. Melt the butter in a pan and brown the meat from all sides, then put it in a roasting pan and roast it for 35 to 40 minutes, depending on the desired doneness. Cover with aluminum foil and let it rest for 10 to 15 minutes.
  3. In the meantime, prepare the sauce. Melt the butter in a pot and mix in the flour. Gradually add the vegetable broth and let it cook for 10 minutes until it gets sauce-like. Add the chopped almonds and season with salt and pepper.
  4. Slice the venison and serve it with the almond sauce.

Apfel Zimt Scones mit Karamell-Sauce | vegan

These scones are perfect for a cozy Sunday morning breakfast. The combination of apples, cinnamon, and caramel sauce is irresistible. Here’s what you’ll need:

  • 2 cups flour
  • 1/2 cup sugar
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup vegan butter
  • 1/2 cup chopped apples
  • 1 tsp cinnamon
  • 1/2 cup almond milk

Instructions:

  1. Preheat the oven to 220°C.
  2. In a large bowl, combine the flour, sugar, baking powder, and salt. Cut in the vegan butter until the mixture resembles coarse crumbs. Add the chopped apples and cinnamon and mix well.
  3. Add the almond milk and stir until the mixture forms a soft dough.
  4. Turn out the dough onto a floured surface and knead lightly. Roll out the dough to a thickness of 2 cm.
  5. Cut out the scones with a cookie cutter and place them on a baking sheet. Bake for 10-12 minutes or until golden brown.
  6. For the caramel sauce, heat a small pot on medium heat, add 1 cup of sugar and cook until it has caramelized into a deep amber color. Then, add 1/2 cup vegan butter and stir. Finally, add 1/2 cup almond milk and stir until completely combined. Serve it over the scones.

Rosinen-Mandel-Hefezopf

This bread is perfect for brunch or breakfast. The combination of raisins and almonds is a classic in Germany. Here’s what you’ll need:

  • 500g flour
  • 1 Pck. Trockenhefe
  • 80g Zucker
  • 1 Prise Salz
  • 1 Vanilleschote
  • 250ml Milch
  • 1 Ei
  • 50g weiche Butter
  • 100g Mandeln
  • 100g Rosinen

Instructions:

  1. In a bowl mix flour with sugar, salt, vanilla and dry yeast.
  2. In another bowl mix milk, butter and egg.
  3. Incorporate the milk mixture to the flour, and knead this till it is pretty smooth.
  4. Add the raisins and almonds until they mix evenly.
  5. Let it rest in a warm place for 30 min. or until the dough has risen double its size. Preheat oven at 200°C.
  6. Place it in the oven and let it bake till golden brown.
