Feta with Tomatoes and Olives
Ingredients:
- 250g block of feta cheese
- 1 cup cherry tomatoes, halved
- 1/2 cup kalamata olives, pitted
- 1 small red onion, thinly sliced
- 2 cloves of garlic, minced
- 1 tbsp olive oil
- 1 tbsp fresh oregano or 1 tsp dried oregano
- Salt and pepper, to taste
Instructions:
- Preheat your oven to 200C (400F) and line a baking dish with parchment paper.
- Place your block of feta cheese in the middle of the dish and place the cherry tomatoes, olives and red onion around it.
- Drizzle the olive oil over the top of the cheese and vegetables and sprinkle the minced garlic and oregano over everything.
- Season with salt and pepper and bake in the preheated oven for 20-25 minutes, or until the cheese is golden and the vegetables are soft and slightly caramelized.
Tomato Salad with Feta and Olives
Ingredients:
- 4 large tomatoes, diced
- 1/2 cup kalamata olives, pitted
- 1/2 cup crumbled feta cheese
- 1 small red onion, thinly sliced
- 2 tbsp olive oil
- 2 tbsp balsamic vinegar
- 1 tbsp fresh oregano or 1 tsp dried oregano
- Salt and pepper, to taste
Instructions:
- In a large bowl, combine the diced tomatoes, olives and sliced red onion.
- In a small bowl, whisk together the olive oil, balsamic vinegar and oregano. Season with salt and pepper to taste.
- Pour the dressing over the tomato mixture and toss well to combine.
- Sprinkle the crumbled feta cheese on top of the salad and serve chilled.
Feta with Olives and Spaghetti
Ingredients:
- 250g spaghetti
- 200g block of feta cheese, crumbled
- 1/2 cup kalamata olives, pitted
- 2 large tomatoes, chopped
- 4 cloves of garlic, minced
- 1/4 cup olive oil
- 1/4 cup fresh parsley, chopped
- Salt and pepper, to taste
Instructions:
- Cook the spaghetti according to the package instructions until al dente.
- While the spaghetti is cooking, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic and sauté for 1-2 minutes, until fragrant.
- Add the chopped tomatoes and olives to the skillet and cook for another 2-3 minutes, until the tomatoes are soft and slightly caramelized.
- Add the crumbled feta cheese to the skillet and stir well to combine.
- Drain the cooked spaghetti and add it to the skillet with the feta and tomato mixture.
- Toss everything together well and season with salt and pepper to taste.
- Garnish with chopped parsley and serve hot!
Tomatoes with Feta and Olives
