Original-Carbonara
Ingredients:
- 300 g spaghetti
- 100 g pancetta
- 2 cloves of garlic
- 2 egg yolks
- 50 g Parmesan cheese
- 1 pinch of salt and pepper
Instructions:
- Cook the spaghetti according to package instructions until al dente.
- In the meantime, fry the pancetta and minced garlic in a pan over medium heat until crispy. Don’t burn the garlic!
- In a bowl, whisk together the egg yolks, Parmesan cheese, salt, and pepper until combined.
- When the pasta is done, reserve about 1/2 cup of the cooking water and drain the rest.
- Transfer the pasta to the pan with the pancetta, garlic, and rendered fat. Toss until coated.
- Remove the pan from heat, add the egg mixture and reserved pasta water. Toss until pasta is coated and creamy.
- Serve immediately with more grated Parmesan cheese and black pepper.
Spaghetti alla carbonara
Ingredients:
- 500 g spaghetti
- 200 g bacon
- 4 egg yolks
- 150 ml heavy cream
- 50 g Parmesan cheese
- 1 pinch of salt and pepper
Instructions:
- Cook the spaghetti according to package instructions until al dente.
- In the meantime, fry the bacon in a pan over medium heat until crispy. Drain the fat.
- In a bowl, whisk together the egg yolks, heavy cream, Parmesan cheese, salt, and pepper until combined.
- When the pasta is done, reserve about 1/2 cup of the cooking water and drain the rest.
- Add the pasta to the pan with the bacon and toss until coated.
- Add the egg mixture and reserved pasta water. Toss until pasta is coated and creamy.
- Serve immediately with more grated Parmesan cheese and black pepper.
Kartoffelgratin alla Carbonara
Ingredients:
- 1 kg potatoes
- 200 g bacon
- 2 onions
- 200 ml heavy cream
- 5 eggs
- 50 g Parmesan cheese
- 1 pinch of salt and pepper
Instructions:
- Preheat the oven to 200°C.
- Peel and slice the potatoes and onions.
- In a pan over medium heat, fry the bacon until crispy. Add the onions and cook until softened.
- In a bowl, whisk together the eggs, heavy cream, Parmesan cheese, salt, and pepper until combined.
- In a large baking dish, layer the potatoes and bacon mixture. Pour the egg mixture on top.
- Bake for 50-60 minutes, until the top is golden and the potatoes are tender.
- Serve hot with a green salad on the side.
Spaghetti Carbonara with Green Beans
Ingredients:
- 300 g spaghetti
- 200 g green beans, trimmed
- 4 slices of bacon, chopped
- 3 egg yolks
- 50 g Parmesan cheese
- 1 pinch of salt and pepper
Instructions:
- Cook the spaghetti according to package instructions until al dente.
- In the last 3 minutes of cooking, add the green beans to the pot.
- Meanwhile, fry the bacon in a pan over medium heat until crispy. Drain the fat.
- In a bowl, whisk together the egg yolks, Parmesan cheese, salt, and pepper until combined.
- When the pasta and green beans are done, reserve about 1/2 cup of the cooking water and drain the rest.
- Add the pasta, green beans, and bacon to the pan and toss until coated.
- Add the egg mixture and reserved pasta water. Toss until pasta is coated and creamy.
- Serve immediately with more grated Parmesan cheese and black pepper.
