  • 1 onion, chopped
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons paprika
  • 1 lb beef stew meat, cubed
  • 3 cups beef broth
  • 1 can diced tomatoes
  • 2 potatoes, peeled and cubed
  • 1 cup frozen peas
  • Salt and pepper, to taste

Instructions:

  1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the onion and garlic, and sauté for a few minutes until softened.
  2. Add the paprika and beef, and cook until the beef is browned.
  3. Pour in the beef broth and tomatoes, and stir to combine.
  4. Add the potatoes, peas, salt, and pepper, and bring to a boil.
  5. Reduce the heat and simmer for about 1 hour, or until the beef is tender and the vegetables are cooked through.
  6. Enjoy with some crusty bread on the side!
