Need something sweet to satisfy your cravings? Try these refreshing apricot muffins. Perfect for a quick snack or for sharing with friends and family.
What you’ll need:
- 1 cup all-purpose flour
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup almond milk
- 1/4 cup vegetable oil
- 1 flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water)
- 1 cup chopped fresh apricots
Instructions:
- Preheat the oven to 375°F (190°C) and grease a muffin tin.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, mix together the almond milk, vegetable oil, and flax egg.
- Add the wet ingredients to the dry ingredients and mix until just combined. Don’t overmix!
- Gently fold in the chopped apricots.
- Spoon the batter into the muffin tin, filling each cup about 3/4 full.

Instructions:
- For the iced tea, bring 2 cups of water to a boil and steep the tea bags or loose tea for 5-7 minutes.
- Remove the tea bags or strain the loose tea and stir in the sugar until dissolved.
- Add 2 cups of cold water and refrigerate until chilled.
- For the lemonade, combine the lemon juice and 2 cups of water in a pitcher and stir in the sugar until dissolved.
- Add 2 cups of cold water and refrigerate until chilled.
- When ready to serve, fill glasses with ice cubes and pour in the tea or lemonade.
- Add your desired additions and stir to combine.
- Sip and savor the deliciousness!
