Leckere Linsensuppe Rezepte - ein einfaches und gesundes Mittagessen!

Hey y’all! Today I’m sharing with y’all some of my favorite linsensuppe (lentil soup) recipes that are easy to make and oh so delicious. Lentil soup is a favorite in my household, especially during the chilly weather season. Not to mention, it’s packed with protein and nutrients to keep you feeling full and satisfied. So let’s get into it!

  1. Anatolische Linsensuppe

First up, we have the classic anatolische linsensuppe recipe. Here’s what you’ll need:

  • 500g of lentils
  • 3 onions, chopped
  • 3 cloves of garlic, minced
  • 2 tomatoes, chopped
  • 2 potatoes, diced
  • 2 carrots, diced
  • 2 tbsp tomato paste
  • 1 tbsp paprika powder
  • 1 tbsp ground cumin
  • 1 tbsp dried mint
  • Salt and pepper to taste
  • 4 cups of water or vegetable broth

Instructions:

  1. Heat some olive oil in a pot and add the onions and garlic. Sauté until fragrant.
  2. Add the diced potatoes and carrots and continue to sauté for a few more minutes.
  3. Add the lentils, chopped tomatoes, tomato paste, and spices. Stir well.
  4. Add the water or vegetable broth and bring to a boil. Reduce heat and simmer for about 30 minutes or until the lentils are cooked.
  5. Serve hot with some crusty bread.

Next up, we have a delicious potato and lentil soup recipe. This one is a bit creamier and heartier than the previous recipe.

  • 500g of lentils
  • 3 potatoes, peeled and diced
  • 1 onions, chopped
  • 3 cloves of garlic, minced
  • 2 cups of milk
  • 2 cups of vegetable broth
  • 2 tbsp olive oil
  • 1 tbsp paprika powder
  • 1 tbsp dried oregano
  • Salt and pepper to taste

Instructions:

  1. Heat some olive oil in a pot and add the onions and garlic. Sauté until fragrant.
  2. Add the diced potatoes and continue to sauté for a few more minutes.
  3. Add the lentils, paprika powder, oregano, salt, and pepper. Stir well.
  4. Add the vegetable broth and bring to a boil. Reduce heat and simmer for about 20 minutes or until the lentils are cooked.
  5. Add the milk and continue to simmer for another 10 minutes.
  6. Serve hot with some bread or crackers.

And last but not least, we have a unique take on lentil soup - lasagne soup! This is perfect for those who love the flavors of lasagne but want something a bit lighter.

  • 1 pound of ground beef or turkey
  • 2 cups of uncooked small pasta
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 can (28 oz) of crushed tomatoes
  • 4 cups of vegetable broth
  • 1 tbsp olive oil
  • 1 tbsp Italian seasoning
  • Salt and pepper to taste
  • 1 cup of shredded mozzarella cheese

Instructions:

  1. Heat some olive oil in a pot and add the onions and garlic. Sauté until fragrant.
  2. Add the ground beef or turkey and cook until browned.
  3. Add the crushed tomatoes, vegetable broth, Italian seasoning, salt, and pepper. Stir well.
  4. Bring the soup to a boil and add the uncooked pasta. Cook for about 10 minutes or until the pasta is cooked.
  5. Serve hot and top with some shredded mozzarella cheese.
