Schakschuka mit Ziegenkäse### Ingredients:

  • 1 onion
  • 1 red bell pepper
  • 2 garlic cloves
  • 1 tsp paprika powder
  • 1 tin of chopped tomatoes
  • 4 eggs
  • 50g of goat cheese
  • Handful of parsley

Instructions:

  1. Cut the onion and bell pepper into small pieces and fry them in some olive oil in a pan until they are soft.
  2. Add the chopped garlic and paprika powder and fry for another minute.
  3. Add the tin of chopped tomatoes and let everything simmer for 10-15 minutes until the sauce has thickened.
  4. Make 4 small wells in the tomato sauce and break the eggs in them.
  5. Crumble the goat cheese over the eggs and put a lid on the pan, then let everything cook for a few minutes or until the eggs are cooked to your liking.
  6. Garnish with some parsley and serve with some bread or pita.

Hummus

  • 1 tin of chickpeas
  • 1 garlic clove
  • 3 tbsp tahini
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • Pinch of salt

Instructions:

  1. Drain and rinse the chickpeas.
  2. Add the chickpeas, garlic clove, tahini, olive oil, lemon juice, and salt to a blender or food processor.
  3. Blend everything until smooth and creamy.
  4. Serve with some veggies or pita bread for dipping.

Gebackenes Abendessen### Ingredients:

  • 4 chicken breasts
  • 1 red onion
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 2 garlic cloves
  • 1 lemon
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 200°C.
  2. Cut the red onion and bell peppers into slices and place them in a baking dish.
  3. Add the smashed garlic cloves to the dish.
  4. Cut the lemon in half and squeeze the juice over the veggies.
  5. Sprinkle the smoked paprika and oregano over the veggies and mix everything together with some olive oil, salt, and pepper.
  6. Nestle the chicken breasts in the veggies and season with some more salt and pepper.
  7. Bake everything for 25-30 minutes or until the chicken is cooked through.
