Mangold-Curry mit Spinat und Ricotta

Hey y’all! Today I’m feeling like sharing some yummy recipes with y’all. I’ve got some delicious recipes using one of my favorite veggies, spinach and mangold. And to make it even creamier, we’ll be adding some ricotta cheese to the mix. Trust me, once you try these recipes, you’ll be hooked.

Cremige Tagliatelle mit Ricotta und frischem Spinat

First up, we’ve got a delicious creamy tagliatelle pasta with ricotta and fresh spinach. Here’s what you’ll need:

  • 500g Tagliatelle
  • 300g Ricotta
  • 200g Fresh spinach
  • 3 cloves Garlic, minced
  • 1 cup Heavy cream
  • 1/2 cup Grated parmesan cheese
  • Salt and pepper, to taste
  • 2 tbsp Olive oil

Instructions:

  1. Cook the tagliatelle according to the package instructions.
  2. In a pan, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1-2 minutes.
  3. Add the fresh spinach to the pan and cook until wilted.
  4. Add the ricotta cheese and heavy cream to the pan and stir until combined.
  5. Add the grated parmesan cheese to the pan and stir until melted.
  6. Season with salt and pepper, to taste.
  7. Add the cooked tagliatelle to the pan and toss until the pasta is coated in the creamy sauce.
  8. Serve hot and enjoy!

Cremige Tagliatelle mit Ricotta und frischem SpinatTarte mit Spinat und Ricotta

Next up, we’ve got a delicious tart with spinach and ricotta. Here’s what you’ll need:

  • 1 pie crust
  • 400g Fresh spinach
  • 250g Ricotta
  • 3 Eggs
  • 1/2 cup Grated parmesan cheese
  • Salt and pepper, to taste

Instructions:

  1. Preheat your oven to 180°C.
  2. Line your pie crust with parchment paper and fill with baking weights or dried beans.
  3. Bake for 10 minutes.
  4. Meanwhile, in a pan, cook the spinach until wilted.
  5. In a mixing bowl, whisk together the ricotta, eggs, grated parmesan cheese, salt, and pepper.
  6. Add the cooked spinach to the mixing bowl and stir until combined.
  7. Pour the mixture into the pre-baked pie crust.
  8. Bake for 30-40 minutes or until the filling is set and the crust is golden brown.
  9. Serve hot and enjoy!

Tarte mit Spinat und RicottaLinsen-Mangold-Curry

Lastly, we’ve got a delicious lentil and mangold curry. Here’s what you’ll need:

  • 1 cup Lentils
  • 2 cups Water
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 1 bunch Mangold, chopped
  • 1 can Diced tomatoes
  • 2 tbsp Curry powder
  • 1 tbsp Olive oil
  • Salt and pepper, to taste

Instructions:

  1. Rinse the lentils and add them to a pot with the water. Bring to a boil, then reduce the heat and simmer until the lentils are tender, about 20-30 minutes.
  2. In a pan, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 5-7 minutes.
  3. Add the minced garlic to the pan and cook for another minute.
  4. Add the chopped mangold to the pan and cook until wilted, about 5-7 minutes.
  5. Add the can of diced tomatoes and curry powder to the pan and stir until combined.
  6. Add the cooked lentils to the pan and stir until combined. Season with salt and pepper, to taste.
  7. Cover and simmer for another 10-15 minutes, stirring occasionally.
  8. Serve hot and enjoy!
