One of my favorite ways to enjoy Rosenkohl is in the form of an absolutely indulgent and decadent Rosenkohl Auflauf. If you’re not familiar with German cooking, an “auflauf” is essentially a casserole that is baked in the oven. To make a Rosenkohl Auflauf, start by preheating your oven to 350 degrees Fahrenheit. Then, trim the ends off a pound of Rosenkohl and cut them in half. Blanch them in boiling salted water for about 5 minutes until they are tender but still slightly crunchy. Next, fry up some bacon in a pan until crispy. Use a slotted spoon to remove the bacon and set it aside, leaving the rendered fat in the pan. Use the same pan to cook some onions and garlic until they are soft and fragrant. Add some flour to the pan to create a roux and cook it out for a minute or two. Then, whisk in some milk and bring the mixture to a simmer, whisking constantly until it thickens. Stir in some grated cheese and let it melt, creating a deliciously creamy and cheesy sauce. Add the cooked bacon and Rosenkohl to the pan and mix until everything is well coated in the sauce. Transfer everything to a baking dish and top with more grated cheese and some breadcrumbs. Bake in the oven for about 20-25 minutes until the cheese is melted and bubbly and the breadcrumbs are golden brown and crunchy. Serve this indulgent and comforting Rosenkohl Auflauf straight out of the oven, garnished with some fresh chopped herbs and a dollop of sour cream on top. Trust me, this is one dish that will win over even the most stubborn Rosenkohl skeptics! Of course, there are plenty of variations on the classic Rosenkohl Auflauf recipe.
