Ultimate Chocolate Brownies

Ingredients:

  • 225g unsalted butter
  • 225g dark chocolate
  • 200g caster sugar
  • 4 large eggs, beaten
  • 1 tsp vanilla extract
  • 100g plain flour
  • 1 tsp baking powder
  • Pinch of salt

Instructions:

  1. Preheat the oven to 180°C and grease a baking tin.
  2. Melt the butter and chocolate together in a heatproof bowl set over a pan of simmering water, stirring occasionally.
  3. Remove from the heat and stir in the sugar.
  4. Add the eggs, one at a time, beating well after each addition.
  5. Stir in the vanilla extract.
  6. Sift the flour, baking powder and salt together into the chocolate mixture and fold in until combined.
  7. Pour the mixture into the prepared tin and bake for 25-30 minutes, until the centre is set but still slightly gooey.
  8. Leave to cool in the tin for 10 minutes before turning out onto a wire rack to cool completely.
  9. Serve with a big scoop of vanilla ice cream and enjoy!

  • 200g unsalted butter
  • 250g caster sugar
  • 4 large eggs, beaten
  • 1 tsp vanilla extract
  • 150g plain flour
  • 50g cocoa powder
  • 1 tsp salt
  • 1 tsp baking powder
  • 100g macadamia nuts, chopped

Instructions:

  1. Preheat the oven to 180°C and grease a baking tin.
  2. Melt the chocolate and butter together in a heatproof bowl set over a pan of simmering water, stirring occasionally.
  3. Remove from the heat and stir in the sugar.

  9. Leave to cool in the tin for 10 minutes before turning out onto a wire rack to cool completely.
  10. Sprinkle with some more chopped macadamia nuts and serve with a dollop of whipped cream for extra indulgence.

  • 125g dark chocolate, chopped
  • 125g unsalted butter
  • 100g caster sugar
  • 3 eggs, beaten

  • 50g desiccated coconut
  • 75g plain flour
  • 1 tsp baking powder
  • 1 pinch of salt

Instructions:

  1. Preheat the oven to 180°C and line a baking tray with parchment paper.
  2. Melt the chocolate and butter together in a heatproof bowl set over a pan of simmering water, stirring occasionally.
  3. Remove from the heat and stir in the sugar.
  4. Add the eggs, one at a time, beating well after each addition.
  5. Stir in the vanilla extract and desiccated coconut.
  6. Sift the flour, baking powder and salt together into the chocolate mixture and fold in until combined.
  7. Pour the mixture into the prepared tray and spread it out evenly.
  8. Bake for 25-30 minutes, until the top is shiny and the edges are set.
  9. Leave to cool in the tray for 10 minutes before cutting into squares.
  10. Dust with some more desiccated coconut and serve.
