Ultimate Chocolate Brownies
Ingredients:
- 225g unsalted butter
- 225g dark chocolate
- 200g caster sugar
- 4 large eggs, beaten
- 1 tsp vanilla extract
- 100g plain flour
- 1 tsp baking powder
- Pinch of salt
Instructions:
- Preheat the oven to 180°C and grease a baking tin.
- Melt the butter and chocolate together in a heatproof bowl set over a pan of simmering water, stirring occasionally.
- Remove from the heat and stir in the sugar.
- Add the eggs, one at a time, beating well after each addition.
- Stir in the vanilla extract.
- Sift the flour, baking powder and salt together into the chocolate mixture and fold in until combined.
- Pour the mixture into the prepared tin and bake for 25-30 minutes, until the centre is set but still slightly gooey.
- Leave to cool in the tin for 10 minutes before turning out onto a wire rack to cool completely.
- Serve with a big scoop of vanilla ice cream and enjoy!

Ingredients:
- 200g dark chocolate, chopped
- 200g unsalted butter
- 250g caster sugar
- 4 large eggs, beaten
- 1 tsp vanilla extract
- 150g plain flour
- 50g cocoa powder
- 1 tsp salt
- 1 tsp baking powder
- 100g macadamia nuts, chopped
Instructions:
- Preheat the oven to 180°C and grease a baking tin.
- Melt the chocolate and butter together in a heatproof bowl set over a pan of simmering water, stirring occasionally.
- Remove from the heat and stir in the sugar.
- Add the eggs, one at a time, beating well after each addition.
- Stir in the vanilla extract.
- Sift the flour, cocoa powder, baking powder and salt together into the chocolate mixture and fold in until combined.
- Add the chopped macadamia nuts and stir until evenly distributed.
- Pour the mixture into the prepared tin and bake for 25-30 minutes, until the centre is set but still slightly gooey.
- Leave to cool in the tin for 10 minutes before turning out onto a wire rack to cool completely.
- Sprinkle with some more chopped macadamia nuts and serve with a dollop of whipped cream for extra indulgence.
Kokos-Schokoladen-Kuchen vom Blech
Ingredients:
- 125g dark chocolate, chopped
- 125g unsalted butter
- 100g caster sugar
- 3 eggs, beaten
- 1 tsp vanilla extract
- 50g desiccated coconut
- 75g plain flour
- 1 tsp baking powder
- 1 pinch of salt
Instructions:
- Preheat the oven to 180°C and line a baking tray with parchment paper.
- Melt the chocolate and butter together in a heatproof bowl set over a pan of simmering water, stirring occasionally.
- Remove from the heat and stir in the sugar.
- Add the eggs, one at a time, beating well after each addition.
- Stir in the vanilla extract and desiccated coconut.
- Sift the flour, baking powder and salt together into the chocolate mixture and fold in until combined.
- Pour the mixture into the prepared tray and spread it out evenly.
- Bake for 25-30 minutes, until the top is shiny and the edges are set.
- Leave to cool in the tray for 10 minutes before cutting into squares.
- Dust with some more desiccated coconut and serve.
