- 250g sugar

- 100ml rum or vodka
1. In a saucepan, cook the sugar and split vanilla bean with 3-4 tablespoons of water over moderate heat until the sugar dissolves and the mixture becomes a caramel.
2. Slowly pour the cream into the caramel while stirring. Don’t worry if the mixture gets lumpy, just keep stirring until it has smoothed out.
3. Add the beer and let it cook over low heat for about 5 minutes with constant stirring.
4. Allow the mixture to cool, then add rum or vodka and stir.
5. Pour the liquid through a fine mesh strainer to get rid of any particles and bottle it up. Keep it in the fridge until consumed.
