- 4 Rote Beete
- 200g Halloumi

Preheat your oven to 200°C. Peel and slice the beets into thin rounds and place them on a baking sheet. Drizzle with olive oil and thyme leaves and season with salt and pepper. Roast in the oven for 30 minutes or until tender. While the beets are roasting, cut the halloumi into slices and pan-fry them until golden on both sides. Once the beets are done, arrange the slices on a plate, top with the fried halloumi, and squeeze fresh lemon juice on top. Serve warm and enjoy!
Möhren-Spargel-Pasteten
If you’re in the mood for something a little more savory, these carrot and asparagus pastries are sure to hit the spot. Here’s what you’ll need:
- 1 Bund grüner Spargel
- 2 Möhren
- 1 Zwiebel
- 1 Knoblauchzehe
- 2 EL Olivenöl
- 1 EL Tomatenmark
- 150ml Gemüsebrühe
- 1 Rolle Blätterteig (aus dem Kühlregal)
- 1 Eigelb
- 1 EL Wasser
Preheat your oven to 200°C and line a baking sheet with parchment paper. Peel and chop the onion and garlic and sauté them in olive oil until translucent. Peel and thinly slice the carrots and cut the asparagus into bite-sized pieces. Add them to the pan and cook for a few minutes. Add in the tomato paste and vegetable broth and let the mixture simmer for a few minutes until the vegetables are tender. Season with salt and pepper to taste. Roll out the puff pastry and cut it into 4 equal pieces. Divide the vegetable mixture between each piece of pastry and fold it over into a triangle shape. Brush the pastry with a mixture of beaten egg yolk and water. Bake for 15-20 minutes or until golden brown. Serve hot and enjoy!
