Ingredients:

  • 1 lb potatoes
  • 1 lb green beans
  • 1 onion
  • 2 cloves garlic
  • 1 tbsp paprika
  • 1 tsp cumin
  • 1/4 cup vegetable broth
  • Salt and pepper to taste

Instructions:

  1. Peel and chop potatoes into bite-size pieces.
  2. Trim ends off green beans and chop onion and garlic.
  3. Heat some olive oil in a large pan over medium heat and add potatoes to the pan. Cook for about 10 minutes until they start to soften.
  4. Add onion and garlic to the pan and cook for 2-3 minutes until they start to soften.
  5. Add green beans and cook for 5-7 minutes until they become tender but still a little crispy.
  6. Add paprika, cumin, vegetable broth, salt, and pepper to the pan and toss to combine.
  7. Cook for an additional 3-5 minutes until the broth has thickened and everything is cooked through.
  8. Serve hot and enjoy!

Ingredients:

  • 1 lb potatoes
  • 1 lb green beans
  • 1 onion
  • 2 cloves garlic
  • 1 tbsp olive oil
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/4 cup vegetable broth
  • Salt and pepper to taste

Instructions:

  1. Peel and chop potatoes into bite-size pieces.
