Schwäbischer Zwiebelkuchen
Starting off with a classic - this Schwäbischer Zwiebelkuchen recipe will leave you wanting more. Here’s what you’ll need:
Ingredients:
- 500g of flour
- 1 cube of yeast
- 250 ml of milk
- 1 egg
- 1 tsp of salt
- 600g of onions
- 200g of bacon
- 3 eggs
- 600 ml of cream
- Salt and pepper to taste
Instructions:
- Mix flour, yeast, milk, egg, and salt in a bowl and knead the mixture until a smooth dough is formed. Cover it and let it rest for 30 minutes.
- Peel and slice the onions and fry them with bacon until they become translucent.
- Pre-heat your oven to 180°C.
- Roll out the dough and place it in your baking tray. Pierce the dough base with a fork all over so the heat can escape while cooking.
- Beat the eggs together with the cream and season with salt and pepper. Add the onion-bacon mixture into the bowl, mixing it all together. Pour mixture onto the dough base you placed in the baking tray.
- Bake the Zwiebelkuchen in the oven at 180°C for 45-55 minutes until golden brown.
- When done, let the cake cool for a few minutes, slice it up, and enjoy!
Einfacher Zwiebelkuchen
Up next, we have this super easy yet super delicious Einfacher Zwiebelkuchen recipe. Check out the ingredients:
Ingredients:
- 500g shortcrust pastry
- 4 large onions
- 200g diced bacon
- 4 eggs
- 2 teaspoons salt
- 500ml milk
- 2 tablespoons flour
- Pepper and nutmeg to taste
Instructions:
- Pre-heat your oven to 200°C.
- Peel and slice the onions and fry them with the bacon until the onions are translucent.
- Roll out the shortcrust pastry and line it in a large tart tray.
- In a bowl, whisk eggs with salt, pepper, and nutmeg. Add in milk and flour and whisk mixture until smooth.
- Pour the egg mixture over the bacon-onion mixture and put the tray in the oven for 30-40 minutes until the mixture becomes firm and a golden crust is formed on top.

To top it all off, we have a luxurious recipe for Café Pushkin in Moskau - Sterlet mit Gemüse und feiner Soße. Here’s how you can make it:
Ingredients:
- 1 Sterlet (around 1 kg)
- 150g butter
- 1 lemon (sliced)
- 2 onions (sliced)
- 1 carrot (sliced)
- 1 celery (sliced)
- 400-500 ml fish broth
- 200 ml white wine
- 200 ml heavy cream
- Salt and pepper to taste
Instructions:
- Clean the Sterlet by carefully removing its head, guts, and scale. Cut it in half and remove the bone.
- Saute the sliced vegetables with half of the butter in a large oven-safe pan until they are soft.
- Season the fish with salt and pepper and lay the fish on top of the cooked vegetables. Add the sliced lemon on top.
- Pour the fish broth and white wine over the fish.
- Preheat the oven to 200°C and cook the fish in the oven for around 10-15 minutes until it becomes tender and slightly crispy.
- Take the cooked fish out of the pan and set it aside. Strain the broth and cook it again in a saucepan until it becomes a concentrated sauce.
- Add cream into the saucepan and cook until the mixture thickens.
- Add the remaining butter and season with salt and pepper to taste.
- Serve the fish with vegetables and the thickened sauce on top. And enjoy your fancy feast!
